Braised Collard Greens

Healthy Choice Recipe of the Week

Collard Greens

Ingredients

  • 2 tbsp. olive oil
  • 1 large (12 oz.) yellow onion, sliced (about 3½ cups)
  • 2 tbsp. minced garlic (from about 6 garlic cloves)
  • 1 tsp. kosher salt, plus more to taste
  • ½  tsp. black pepper
  • ¼  tsp. crushed red pepper
  • 3 medium bunches of collard greens (about 10 oz. each), stemmed, halved lengthwise, and cut crosswise into ½ in. strips (about 13 cups)
  • 4 cups chicken stock
  • 1¾ lb. smoked turkey  (about 2 large pieces)
  • 2 fresh bay leaves
  • 2 tsp. apple cider vinegar (optional)


Directions

  • Heat oil in a large Dutch oven over medium.
  • Add onion; cook, stirring occasionally, until softened and lightly browned, about 10 minutes.
  • Stir in garlic, salt, black pepper, and crushed red pepper; cook, stirring constantly, until garlic is fragrant, about 1 minute.
  • Add greens, stirring to coat.
  • Add stock, chopped smoked turkey, and bay leaves; bring to a simmer over medium-high.
  • Reduce heat to low; cover and simmer, undisturbed, until greens are tender, liquid has concentrated in flavor, and hocks are fork-tender, about 1 hour, 15 minutes.
  • Remove from heat.

Weekly Activity Guidelines

Regular physical activity helps improve your overall health, fitness, and quality of life. It also helps reduce your risk of chronic conditions like obesity, type-2 diabetes, heart disease, many types of cancer, depression and anxiety, and dementia.


Adults

At least 150 minutes of moderate-intensity aerobic activity every week, plus muscle-strengthening activities at least two days a week. Adults 65 and older also need balance-improving activities.


Tips

  • Adults: try walking 30 minutes a day, five days a week.
  • Older adults: practice standing on one foot or walking

Kids (From 6-17 Years Old)

60 minutes (1 hour) or more of physical activity each day


Pre-School Aged Children (From 3-5 Years Old)

Should be physically active throughout the day, with plenty of opportunities for active play.


Cardio or Aerobic Activity

Moderate or vigorous intensity, every minute counts. It gets you breathing harder and your heart beating faster.

  • Dancing
  • Yard Work


Muscle Strengthening

Works best when you work all your body's major muscle groups. Includes legs, hips, back, chest, abs, shoulders, arms


Examples:

  • Carrying Heavy Loads, Including Groceries
  • Heavy Gardening
